@Anke okay to turn that into a pot of potatoes you will need
1. a large plant pot (at least 30cm across and make sure it's deep) or bucket (a cheap bucket will do the job and likely be cheaper)
2. compost
3. A sunny spot.
instructions:
1. place potato on a windowsill until sprouts appear from the eyes (a week or so)
2. once ready fill bucket to about 1/3 full with compost and place spud in centre. Add more compost until just covered. Water.
3. As sprouts appear above surface add compost

@Anke well you need to chit the spudlet first (the windowsill step) so you have time
@Anke oh and if harvesting indoors you will need a large plastic sheet to protect the floor because you upend the pot and sift through the compost to find the spuds

@Anke once pot full leave and allow to grow after 16-20 weeks you will have a small haul of potatoes
If you have a suitable spot and a few more spuds you can spare then the bag method suggested by @RunningInCircles will produce an even larger haul but that might be a bit much for indoors.

I've grown potatoes in pots outside but inside won't be an issue if you have a bright enough spot that will take a large enough pot.
